
Where Did the Iodine Go?
Exploring our soil, food supply, modern diets, and the changing sources of an essential mineral
We know our bodies need iodine.
We know iodine is important for thyroid health, and as we explored last week, the iodine conversation may extend beyond the thyroid.
But that raises another question:
If iodine is so important, where are we getting it today?
And perhaps an even more interesting question:
Has something changed about the way we get iodine from our food?
To understand that, we have to follow iodine backward, from our bodies to our food, and ultimately to the earth itself.
It Begins With the Soil
Long before a nutrient reaches our plate, its story often begins in the soil.
Iodine occurs naturally in the earth, but it isn't distributed evenly. Some soils contain more iodine than others. The amount of iodine in crops can therefore vary depending on the soil, groundwater, irrigation, fertilizers, and growing conditions.
This means vegetables grown in one area may not contain the same amount of iodine as those grown somewhere else.
And here's something many people don't realize:
Most fruits and vegetables are not naturally rich sources of iodine.
Our food may look abundant, but abundance doesn't always tell us the whole story about its nutrient content.
America Once Had an Iodine Problem
There was a time when iodine deficiency was impossible to ignore.
Before the 1920s, parts of the Great Lakes, Appalachians, and Northwestern United States became known as the “goiter belt.” In some communities, enlarged thyroid glands were remarkably common because people weren't getting enough iodine.
The problem became significant enough that iodine began being added to table salt in the United States during the 1920s.
And it worked.
Salt iodization became one of the important public-health strategies used to reduce iodine deficiency.
Think about that for a moment.
Iodine deficiency was once considered important enough that we intentionally changed part of our food supply to address it.
Yet today, many of us rarely think about iodine at all.
We're Eating Salt, But Is It Iodized?
Here's another interesting piece of the puzzle.
Most of the salt Americans consume today comes from processed and commercially prepared foods. However, food manufacturers in the United States almost always use non-iodized salt.
That means:
Eating plenty of salt doesn't necessarily mean we're getting plenty of iodine.
And what about the beautiful specialty salts filling grocery-store shelves?
Sea salt, kosher salt, Himalayan salt, fleur de sel and other specialty salts are not usually iodized unless the label specifically says otherwise.
This doesn't make those salts “bad.”
It simply means we shouldn't automatically assume that because something is called sea salt, it is a meaningful source of iodine.
Read the label.
That's a small piece of knowledge that can completely change the way we look at the salt in our kitchens.
Our Food Sources Have Changed Too
Iodine has entered the American diet in some surprising ways over the years.
Bread, for example, can contain significant iodine when iodate is used as a dough conditioner. Today, however, only a portion of U.S. bread products use iodate, and breads made without it can contain very little iodine.
Dairy foods can also provide iodine, but their iodine content varies depending on farming and processing practices.
Seaweed and seafood remain some of the richest natural food sources. Eggs and dairy can also contribute meaningful amounts.
But modern eating habits are changing.
Some people consume little seafood. Others avoid dairy or eggs. Many choose plant-based alternatives. Others use specialty salts.
None of these choices automatically creates an iodine deficiency.
But together they give us something worth thinking about:
Have our eating habits changed faster than our awareness of where iodine comes from?
There's Another Side to the Story
Some books and researchers take the iodine conversation even further.
The Iodine Crisis, for example, argues that changes beginning in the twentieth century weren't limited to dietary iodine. The book raises questions about changes in food production and increasing exposure to brominated compounds in our environment.
That introduces a fascinating possibility:
Perhaps the modern iodine conversation isn't only about what has changed in our food. It may also involve what has changed in our environment.
The Root-Cause Question
Root-cause wellness teaches us to look upstream.
If our bodies depend on nutrients that ultimately come through our food and environment, then nutrition isn't simply about counting calories or choosing foods labeled “healthy.”
We can begin asking deeper questions:
Where did my food come from?
What nutrients does it actually provide?
Has our food supply changed?
Am I assuming I'm getting a nutrient simply because I eat a certain food?
And perhaps most importantly:
What does my body need that I may not be thinking about?
Knowledge doesn't require fear.
It requires curiosity.

Take a look around your kitchen this week
- How often do you eat natural iodine-containing foods such as seafood, seaweed, eggs, or dairy?
- Have you ever considered where the minerals in your food actually come from?
- Sometimes awareness begins with something as simple as reading a label.

The body cannot use what it does not receive.Understanding where our nutrients come from helps us make more intentional choices about how we nourish the bodies God has given us.

There is a beautiful connection between the earth, the food it produces, and the bodies those foods nourish.
God designed the body with remarkable nutritional needs, and He created an earth filled with resources to sustain life.
Perhaps part of caring for our health is simply learning to pay closer attention to that connection.
